Don't eat meat when fresh vegetables are available, as simple as that. Kind of like meatless Mondays, but a lot more general and widespread throughout the year. It's worked OK, see below for more.
Create less of an environmental impact by eating less meat (for most of the year), while also learning how to properly buy and cook meat from local vendors when focused on eating meat. This was in place of what I was doing at the time which was not buying meat to cook at home, but feeling comfortable doing so when eating out.
No meat while in Eastern Daylight Time in my regular state of affairs. This breaks out to eating vegetarian (eggs and cheese are OK, fish is not) from the second Sunday in March to the First Sunday in October. I'm allowed to eat meat when traveling to a new place to enjoy the cultural significance or if someone is going to just throw meat away (as it is for environmental reasons after all).
Learned to cook much better both as a vegetarian and meat eater
Do NOT get sick when transitioning back to meat

Hopefully had a minimally positive impact on the environment
People think it's really weird and sometimes hard to keep straight
Constant worries they'll repeal daylight savings time and I'll be stuck in one side of it forever
